Morning Glory Fizz
A restorative Scotch fizz with a touch of absinthe, once considered a morning pick-me-up.

Ingredients
- Scotch Whisky2 oz (60 ml)
- Lemon Juice0.5 oz (15 ml)
- Lime Juice0.5 oz (15 ml)
- Simple Syrup0.5 oz (15 ml)
- Egg White1
- Absinthe2 dashes
- Sparkling Water2 oz (60 ml)
How to make it
- Dry shake all ingredients except soda.
- Add ice, shake.
- Strain into a highball glass.
- Top with soda.

History
The Morning Glory Fizz is a 19th-century eye-opener of Scotch, citrus, absinthe, sugar and egg white, lengthened with soda. Recorded by Jerry Thomas, it was intended as a morning restorative, the absinthe meant to settle the previous night's excess.
