Benton's Old Fashioned
A fat-washed bourbon Old Fashioned using bacon-infused bourbon.

Ingredients
- Bacon-infused Bourbon2 oz (60 ml)
- Maple Syrup0.25 oz (7.5 ml)
- Angostura Bitters2 dashes
How to make it
- Stir all ingredients with ice.
- Strain into a rocks glass over a large ice cube.
- Garnish with an orange peel.

History
Benton's Old Fashioned was created by Don Lee at PDT in New York in 2007 and is a landmark of modern technique. Lee 'fat-washed' bourbon with the smoky rendered fat of Benton's country bacon, then built it into an Old Fashioned with maple syrup — popularizing fat-washing across the cocktail world.
