History
The Bijou — French for 'jewel' — was created by Harry Johnson, the 'father of professional bartending,' and appears in his late-1800s Bartenders' Manual. Its equal parts of gin, sweet vermouth and green Chartreuse were meant to evoke precious stones: diamond, ruby and emerald.
