History

The Test Pilot is a complex tiki cocktail created by Don the Beachcomber (Donn Beach) in the 1940s. Built on light and dark rums with falernum, Cointreau, lime, bitters and a dash of absinthe, it exemplifies the layered, secretive 'rum rhapsody' style that defined early tiki.
