A refreshing gin fizz that's perfect for summer.

- Gin2 oz (60 ml)
- Lemon Juice1 oz (30 ml)
- Simple Syrup0.5 oz (15 ml)
- Club SodaTop
How to make it
- Shake gin, lemon, and syrup.
- Strain into a Collins glass over ice.
- Top with soda.

History
The Tom Collins grew out of the 'Great Tom Collins Hoax of 1874,' a popular practical joke in which people were sent to find a man named Tom Collins who was supposedly slandering them in a nearby bar. The gin, lemon, sugar and soda cooler took the imaginary man's name and became a summer staple.
