History
Created by Hugo Ensslin, head bartender at New York's Hotel Wallick, and published in his 1916 Recipes for Mixed Drinks, the Aviation combines gin, lemon, maraschino and crème de violette. The violette lends a pale sky-blue tint that inspired the name, but it was dropped from the famous Savoy version and only rediscovered when the liqueur returned to the US market in the 2000s.
